LS namely (Low Speed) , HC namely (Highspeed CMOS) understand very easily from the name, former it is low speed chip, chip of high speed CMOS is after, latter can be below taller frequency the job, both be same on the function.
HC373 is 5V, LS373 can accomplish 3V and 5V compatible, when be being used at ordinary times so little distinction, that is to say your sheet piece if machine uses 3.3V, that uses LS, of course a little expensive little.
